Ragstone features a creamy, light texture and an ivory-white mould rind, reminiscent of the renowned French Sainte Maure. As it ages, it develops a drier, firmer texture with peppery notes and a more varied rind. We really love the blue green spots that sometimes develop during autumn, giving it a wonderful sense of uniqueness, terroir and seasonality – a trademark of true artisan cheese. Young Ragstone offers creamy flavours with citrus notes, while age delivers a strong, savoury profile.
